This is more of a review-in-progress, but I'll only update it if I come across something that drastically changes my opinion. I'm far enough into the experience to know what it's about, for the most part.
I'm not going to go into the differences between this and Terraria, or talk about which has more of whatever, because while I loved Terraria, I wasn't hardcore enough to go into that much detail. With that said, Starbound is a huge game and I think in a lot of ways--the UI, the streamlining, the stuff you can do, upgrades--it is better than Terraria. It's focused more on exploration than combat, which is fine, and it's certainly nice to have so many different types of planets to explore.
It's good having quests like this, even if the story is bland and uneventful. The side-quests amount to basically going here and collecting that, but when the game puts you on the track to explore a dungeon, it's a lot of fun.
I have one gripe with this game and it's huge: the quests in which you have to go around and scan civilizations are boring. Their intent must be to encourage exploration, but I find that it actually made my journey more singular, because it was no longer about wanting to find all the different stuff... it was just about finding this one thing. When I would stumble across another area, I'd just think, "Ugh, this isn't where I want to be.". I wasn't enjoying trying to find the right places, and you could easily just wander past them for a long time. Maybe this isn't a popular criticism but it detracted from the game a lot. Regardless, I am not in love with this as I was Terraria.
